Acknowledgements

The Network for Animal Health and Welfare in Organic Agriculture is grateful to the Córdoba City Council for offering the Workshop a magnificent venue at the Palacio de Merced. We are particularly indebted to Council Member Ana Romero Obrero, who addressed the Delegates at both the opening and the closing ceremony.

We would also like to thank the University of Córdoba for help in organising the Workshop. Our special thanks go to the Chancellor of the University, Dr Eugenio Dominiguez Vilches, who addressed the Workshop during the closing ceremony. In addition, we would like to recognise the contributions of the Vice-Chancellor, Dr Francisco Gracia Navarro, the Director of the School of Agronomy, Dr Jesús López Gimenes, and the Director of the Institute of Sociology and Rural Studies, Dr Eduardo Sevilla Guzmán, all of whom participated in various workshop activities.

The Andalucian Committee for Organic Farming helped with the organisation of the Workshop and actively participated in the proceedings. We are very grateful to the Committee, particularly to its President, Dr Francisco Casero Rodriguez, for their contributions.

We would also like to express our warmest thanks to the organic producers, Jesús Fernandes and Jesús Torralbo, who welcomed us so generously to their homes and farms during the field visits.

Special thanks also go to the Olivarera Olipe del Valle de los Pedroches in Córdoba, Bodegas Robles, Quesos Villaden and other producers and processors of organic food who helped in making the Workshop a success.
